Payne’s Rise employs traditional winemaking techniques. Our reds include open ferments, hand plunging and maturation in premium French oak barriques.
A medium red-purple colour, with classic aromas of cassis and blackberry with a hint of spice.
The complex palate exhibits rich berry flavours and lingering tannins.
The 2006 season provided perfect conditions for high quality cabernet fruit.
The wine provides aromas of dark berries and plums.
The palate is medium to full bodied with fine tannins and flavours of berries, cedar and spice.

The wine displays white peach and nectarine with hints of cashew and spice.
The palate is tight and refined, has a clean fine acid, mineral structure with flavours of white peach, nectarine and citrus.
A spicy nutty complexity is added to the palate and nose, derived from yeast lees stirring and barrel ferments.
Lively and zesty. Provides a lingering and refreshing finish.
This unoaked savvy maintains the true varietal characters of the site and will make great summer drinking.
