Payne's Rise hand harvest the fruit when the combination of fruitfulness, flavour and acidity are in balance. We aim to allow the site, terroir and vintage variation to express itself in our fruit.

A medium red-purple colour, with classic aromas of cassis and blackberry with a hint of spice.

The complex palate exhibits rich berry flavours and lingering tannins.

2009 Cabernet Sauvignon

Aromas of blackcurrant, cherry, mint, herbs and dusty oak. The palate is medium weight with blackcurrant, cherry, olive and herbs. A fruit driven wine with firm acid and tannin structure.

2010 Redlands Shiraz $26

True cool climate shiraz, with peppery red fruits and spice. It has a fruity mid-palate with soft tannins, balanced acidity and a persistent spicy finish.

2008 Chardonnay $20

The wine displays white peach and nectarine with hints of cashew and spice.

The palate is tight and refined, has a clean fine acid, mineral structure with flavours of white peach, nectarine and citrus.

A spicy nutty complexity is added to the palate and nose, derived from yeast lees stirring and barrel ferments.

2010 Chardonnay $20

Primary stonefruit aromas of nectarine & peach, with some added spicy savoury complexity from barrel work. The palate is tight & focussed with a clean line of acidity, and a convincing dry grapefruit and lime finish.
